Stellaria Media or Chickweed packs a lot of punch for something so dainty. It’s so nutrient dense it’s beyond silly. Best known is its ability to cool inflammation making it pretty badass when it comes to skin irritation, rashes and conditions that are dry or itchy. This little weed is often pulled up by the tidy gardner but really this guy is friend not foe. It can only be used when fresh to get the saponins from the herb so we hand infused it into oil before including it in products like our vegan, Sage Mama Dribble Rash Balm and Nappy Ointment. Packed full of vitamins you can eat it though too..
RECIPE
Into a blender combine until chunky:
2-3 cups chickweed
1/4 cup walnuts
1/4 cup pine nuts
1/4 cup sunflower seeds
2-3 cloves garlic
Then stir in:
1/2 cup extra-virgin olive oil
1 tablespoon lemon juice
1 teaspoon lemon zest
3 tablespoons of nutritional yeast
Sea salt and freshly ground pepper
Tip: if you pre soak the nuts and seeds overnight this will remove their phytic acid and also lend a lovely creaminess to the pesto.
